How to Stop Cupcake Cases Peeling Away

Peeling Cupcake Cases is easily one of the Top questions asked, and I understand the pain because I had dealt with this issue multiple times when I started working with cupcakes.

Here are some of my TOP findings for Cupcake cases peeling off and how to FIX them once and for all :)

1) QUALITY of Cupcake cases

If the cupcake cases are thin and of low quality, there is a chance for them to peel off from the cupcakes. I prefer to use the standard brown muffin cases, which seem strong enough and of good quality. Or if I want a cupcake case with prints and patterns, I would check if the paper is thick enough compared to the muffin cases.

2) STOP OVERFILLING the Cupcake Cases

When you overfill a cupcake case with batter, it tends to bake above the cupcake cases, which can put an awful amount of weight and pressure on the delicate paper cases.

I fill 2/3rd of my cupcake case with batter, and once baked, the cupcake usually rises just below the rim of the cupcake case, which is perfect.

3) Keep an eye on the OVEN TEMPERATURE

Baking the cupcakes at a lower temperature (160 - 170 degrees Celsius) is better for the cupcakes to bake evenly and rise uniformly with a flat top. If your oven is overheating or underheating, it can also cause uneven baking, leading to over-baked cupcake tops and unbaked cupcake bottoms, which would result in increased moisture in the cupcakes, which would eventually result in the Cupcake Cases Peeling Away. You can use an oven thermometer to check if the oven temperature is accurate.

4) Cupcake Recipe

Another reason for the cupcake cases to peel off is the increased fat content in the recipe. Lowering the fat content (butter/oil) in your recipe is a good starting point. Increased fat content would mean the cakes are greasier, resulting in the cupcake cases becoming moist with oil, which would result in them peeling off.

5) Proper Cooling of the Cupcakes

Once the cupcakes are out of the oven, transfer them immediately to a wire rack and let them cool completely. When you leave the hot baked cupcakes in the cupcake pans (even for as little as 5 minutes), you are allowing the steam to build up in the cupcake cases, which would make the cases wet and eventually peel off.
